Cupcakes, Anyone?

So I decided to bake some coconut cupcakes off a recipe I got from Ina Garten I found online. I was inspired from the Cupcake Challenge my sister and I went to a couple weeks ago.



So, we sifted the flour to make the batter...


Whipped up some homemade cream cheese frosting...



And viola! Cupcake heaven. Ina really knows what she's doing!

So if you happen to work with me or live near me, please come help me consume these. I ended up with 70 of these little guys.

    Those look phenomenal! I might have to bake some myself. Can you buy shredded coconut?? Also, how did you end up with 70!

    Yes, you can buy sweetened shredded coconut anywhere!!

    And I made the mini cupcakes... so we ended up with lots of bite sized deliciousness.
